Instructions

  • Slice your favorite savory meat thinly. Fry on each side in 5-minute intervals until crisp on both sides.

  • Crush the nut topping of your choice in a plastic bag with a hammer.

  • Temper the chocolate: microwave for 30 seconds, then at 15-second intervals until it reaches 113 degrees Fahrenheit. Fold in more chocolate until the temperature comes down to 88 degrees. Mix well.

  • Blot the meat.

  • Spoon out chocolate on top, then smooth it with a cake knife.

  • Add a bit of cinnamon to the other side. Cover with chocolate and smooth with cake knife.
  • Sprinkle crushed nut topping onto warm chocolate.
  • Put in fridge and let cool until hardened.

Notes

Take care when tempering chocolate — overheating can seize it.

Blot the fried meat well before adding chocolate so the coating adheres.
